Spring is in the air with this salmon dish. A pan roasted pave of salmon is served in a lemon brodetto and a side of minty spring pea puree with parmesan cheese. Our lemon brodetto is comprised of sautéed shallots, lemon zest, lemon juice, and chicken stock. It is a very light and bright sauce that compliments both the salmon and the lightly minted pea puree. Let’s just say this is one elegant dish. Serve with your favorite glass of rose on the porch tonight.
