Meatless Monday should be every day with this baked pasta dish. Tender elbow macaroni is baked in a rich gouda cheese béchamel sauce with sautéed Swiss chard folded in. The pasta is then topped with bread crumbs and parmesan cheese; then baked until golden brown. It is so cheesy good. We paired the mac and cheese with a side of creamed Cipollini onions and mushrooms. A great duo if you are craving comfort food this week.
